Shashuka is a classic North American and Middle Eastern dish 

and one that’s eaten for breakfast or any meal of the day. It’s made from simple, healthy ingredients and it is usually vegetarian. Shakshuka literally means “a mixture” and the traditional version uses tomatoes, onions and spices as the base with eggs poached on top. My version is made with ground beef, tomatoes, spinach, onion, garlic and spices as the base with two over easy eggs on top.  Some feta cheese on the side for those who desire to add the cheese.  This is dish is KETO, PALEO and WHOLE30 friendly!
