Shrimp Ceviche Tacos

Traditional ceviche consists of raw seafood tossed with an acidic marinade (think: citrus juice or vinegar) that “cooks” the fish. I cook the shrimp before marinating. Lime juice, jalapeño, red onions, tomatoes, cucumbers, mangoes, cilantro, a dash of hot sauce and chopped tomatoes.  Served with a jicama slaw and almond flour tortillas on the side.
